Description

Strawberry Peanut Butter Yogurt Bark is a creamy, crunchy frozen snack made with simple ingredients like Greek yogurt, fresh strawberries, and dark chocolate. Perfect for a refreshing treat or healthy dessert—easy to make and freezer-friendly!


Ingredients

1 cup fresh strawberries, sliced

¾ cup plain Greek yogurt

⅓ cup natural peanut butter

4 oz dark chocolate chips

2 tbsp freeze-dried strawberries, crushed (optional)


Instructions

  • Wash and slice the fresh strawberries.
  • Arrange them in a single layer on a baking sheet lined with parchment paper, forming a rough rectangle.
  • Freeze the strawberries for about 30 minutes until they are firm.
  • In a medium bowl, stir together the Greek yogurt and peanut butter until smooth and creamy.
  • Remove the frozen strawberries from the freezer and gently spread the yogurt-peanut butter mixture evenly on top.
  • Return the tray to the freezer and chill for another 20 minutes.
  • Meanwhile, melt the chocolate chips in a microwave-safe bowl. Heat in 15 to 30-second intervals, stirring in between. For a smoother consistency, stir in a teaspoon of coconut oil.
  • Spread the melted chocolate over the yogurt-peanut butter layer. Sprinkle with crushed freeze-dried strawberries if desired.
  • Freeze again for about 30 minutes until everything is fully set.
  • Break the bark into pieces and enjoy immediately or store for later!

Notes

Let bark sit at room temperature for 2–3 minutes before slicing.

Add chia seeds or protein powder to the yogurt mixture for extra nutrition.

Swap peanut butter with almond or cashew butter for a twist.

Top with chopped nuts or granola for extra crunch.

White chocolate also works great in place of dark chocolate.
