Ingredients

Scale

For the Cake:

1 box Strawberry Cake Mix (15.25 ounces)

4 large Eggs

8 ounces Cream Cheese, softened

2/3 cup Vegetable Oil

1 cup Brown Sugar

2 teaspoons Ground Cinnamon

For the Icing:

2 cups Confectioners Sugar

1/4 cup Milk

1 teaspoon Strawberry Extract

Red Food Coloring (a few drops)

Instructions

  • Preheat and Prepare: Preheat your oven to 350°F and generously spray a 9×13-inch baking pan with non-stick cooking spray.
  • Make the Cake Batter: In a large bowl, mix the strawberry cake mix, softened cream cheese, eggs, and vegetable oil until smooth and creamy.
  • Mix the Swirl: In a small bowl, stir together the brown sugar and ground cinnamon until well combined.
  • Layer the Cake: Pour half of the cake batter into the prepared baking pan and spread evenly. Sprinkle the cinnamon-sugar mixture evenly over the batter.
  • Add Remaining Batter: Gently spoon the remaining batter on top, spreading it carefully to cover the cinnamon-sugar layer.
  • Bake: Place in the oven and bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  • Make the Glaze: While the cake bakes, whisk together the confectioners sugar, milk, strawberry extract, and red food coloring in a bowl until smooth and slightly thick.
  • Glaze the Cake: Once the cake is done and still warm, pour the glaze evenly over the top. Let it cool completely before slicing and serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days.

Let slices come to room temperature for the best flavor.

Cake can be frozen in individual portions and reheated when needed.

Adjust food coloring to reach your desired shade of pink.

Optional: Add chopped strawberries or nuts for extra texture.
