Description
Strawberry Cottage Cheese Ice Cream is a creamy, high-protein dessert made with just 4 ingredients. This no-churn recipe delivers the flavor of strawberry cheesecake in a nutritious, easy-to-make frozen treat. Perfect for a healthy snack or post-workout refresh!
Ingredients
2 cups cottage cheese (1% or 2% milkfat)
1 cup fresh strawberries, chopped
3 tablespoons honey (adjust to taste)
1 teaspoon vanilla extract or vanilla bean paste
Instructions
- Blend the base: In a Ninja Creami pint, combine the cottage cheese, chopped strawberries, honey, and vanilla extract. Use an immersion blender to blend until smooth. Alternatively, blend the ingredients in a regular blender and pour the mixture into the pint.
- Freeze overnight: Secure the lid on the pint and freeze for a full 24 hours.
- Process the ice cream: After freezing, insert the pint into the Ninja Creami and run the “Lite Ice Cream” cycle.
- Re-spin for creaminess: If the texture is powdery after the first spin, run a “Re-Spin” cycle. You may add a tablespoon of liquid (like milk or almond milk) if needed, especially if using fat-free cottage cheese.
- Customize & serve: Add your favorite mix-ins (like crushed graham crackers or mini chocolate chips), serve immediately, and enjoy your protein-packed treat!
Notes
-
1% or 2% cottage cheese provides the best creamy consistency.
-
Add 1 tbsp milk if using fat-free cottage cheese and the texture needs help.
-
Great base for mix-ins like graham cracker crumbs or mini chocolate chips.
-
Store frozen and re-spin before serving for best texture.
