- 1/2 cup Cream Cheese, softened
- 2 tbsp Sugar
- 1/2 tsp Vanilla Extract
- 1/2 cup Strawberries, diced
- 4 Tortillas (6-inch)
- 2 tbsp Butter, softened
- 1 tsp Sugar
- 1/2 tsp Cinnamon
Instructions
- In a mixing bowl, combine softened cream cheese, sugar, and vanilla extract. Beat until smooth.
- Fold in the diced strawberries gently until well combined.
- Spread half of the cream cheese mixture onto one tortilla.
- Heat 1 tsp of butter in a frying pan over medium-high heat. Place the tortilla in the pan, cream cheese side up.
- Spread 1 tsp butter on the second tortilla and place it butter-side up on top of the first tortilla.
- Cook each side for 2-3 minutes, or until crispy and golden brown.
- Mix sugar and cinnamon together, and sprinkle over the cooked quesadilla.
- Slice and serve warm, with or without a side of strawberry sauce!
