  • 1/2 cup Cream Cheese, softened
  • 2 tbsp Sugar
  • 1/2 tsp Vanilla Extract
  • 1/2 cup Strawberries, diced
  • 4 Tortillas (6-inch)
  • 2 tbsp Butter, softened
  • 1 tsp Sugar
  • 1/2 tsp Cinnamon

Instructions

  • In a mixing bowl, combine softened cream cheese, sugar, and vanilla extract. Beat until smooth.
  • Fold in the diced strawberries gently until well combined.
  • Spread half of the cream cheese mixture onto one tortilla.
  • Heat 1 tsp of butter in a frying pan over medium-high heat. Place the tortilla in the pan, cream cheese side up.
  • Spread 1 tsp butter on the second tortilla and place it butter-side up on top of the first tortilla.
  • Cook each side for 2-3 minutes, or until crispy and golden brown.
  • Mix sugar and cinnamon together, and sprinkle over the cooked quesadilla.
  • Slice and serve warm, with or without a side of strawberry sauce!

Notes

  • These quesadillas are delicious on their own or served with whipped cream or a drizzle of chocolate sauce.
  • Use other fruits like raspberries or peaches for a different twist!
  • For extra crispiness, cook the quesadilla on a griddle to make both at the same time.
