Ingredients
For the Blondie Layer:
1 cup (225g) unsalted butter, melted
1 1/3 cups (240g) light brown sugar, packed
2 large eggs + 1 egg yolk
1 teaspoon vanilla extract
2 1/2 cups (280g) all-purpose flour
2 teaspoons cornstarch
1 teaspoon baking powder
1/2 teaspoon salt
For the Cheesecake Layer:
12 oz (350g) cream cheese, at room temperature
1/3 cup (70g) granulated sugar
1 large egg
2/3 cup (160ml) whipping cream
Zest of 1 lemon
For the Strawberry Topping:
1 lb (450g) fresh strawberries, sliced
3 tablespoons granulated sugar (optional)
Additional lemon zest for garnish
Instructions
- Prepare the Blondie Base:
- Preheat oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper.
- In a large bowl, mix melted butter and brown sugar. Incorporate the eggs and yolk individually, ensuring each is fully blended before adding the next.
- Stir in vanilla extract.
- In another bowl, sift together the flour, cornstarch, baking powder, and salt until evenly combined.
- Gradually combine dry ingredients with the wet mixture.
- Spread the batter evenly in the prepared pan and bake for 15–20 minutes until edges are golden.
- Make the Cheesecake Layer:
- Beat cream cheese until smooth. Add sugar, egg, whipping cream, and lemon zest; mix until creamy.
- Pour over the baked blondie and spread evenly.
- Return to the oven and bake for about 15 more minutes, or until the cheesecake layer is firm but slightly wobbly in the center.
- Turn off the oven and cool inside with the door slightly open.
- Prepare the Strawberry Topping:
- Combine sliced strawberries with lemon zest and optional sugar in a bowl.
- Chill in the refrigerator for 2 hours. Remove 10–15 minutes before serving.
- Assemble and Serve:
- Once cooled, top blondies with strawberry mixture.
- Cut into squares and enjoy!
