1/2 teaspoon salt

For the Cheesecake Layer:

12 oz (350g) cream cheese, at room temperature

1/3 cup (70g) granulated sugar

1 large egg

2/3 cup (160ml) whipping cream

Zest of 1 lemon

For the Strawberry Topping:

1 lb (450g) fresh strawberries, sliced

3 tablespoons granulated sugar (optional)

Additional lemon zest for garnish


Instructions

  1. Prepare the Blondie Base:
    • Preheat oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper.
    • In a large bowl, mix melted butter and brown sugar. Incorporate the eggs and yolk individually, ensuring each is fully blended before adding the next.
    • Stir in vanilla extract.
    • In another bowl, sift together the flour, cornstarch, baking powder, and salt until evenly combined.
    • Gradually combine dry ingredients with the wet mixture.
    • Spread the batter evenly in the prepared pan and bake for 15–20 minutes until edges are golden.
  2. Make the Cheesecake Layer:
    • Beat cream cheese until smooth. Add sugar, egg, whipping cream, and lemon zest; mix until creamy.
    • Pour over the baked blondie and spread evenly.
    • Return to the oven and bake for about 15 more minutes, or until the cheesecake layer is firm but slightly wobbly in the center.
    • Turn off the oven and cool inside with the door slightly open.
  3. Prepare the Strawberry Topping:
    • Combine sliced strawberries with lemon zest and optional sugar in a bowl.
    • Chill in the refrigerator for 2 hours. Remove 10–15 minutes before serving.
  4. Assemble and Serve:
    • Once cooled, top blondies with strawberry mixture.
