  • Make the Cheesecake Base: In a medium mixing bowl, beat the softened cream cheese using a hand mixer on medium-high speed for about 2 to 2.5 minutes until smooth.
  • Combine Cake Mix and Cream Cheese: Gradually add the cooled cake mix to the cream cheese, mixing until fully incorporated.
  • Chill the Mixture: Cover the bowl tightly and refrigerate the mixture for at least 2 hours to firm up.
  • Form the Bites: Line a baking sheet with parchment paper. Use a 1-tablespoon cookie scoop to portion the mixture. Roll each portion into a ball and place it on the prepared baking sheet.
  • Optional Resting: For best results, refrigerate the uncoated bites overnight. This prevents cracking when coated.
  • Melt Candy Wafers: In a microwave-safe bowl, melt the pink candy wafers in 30-second intervals, stirring after each, until smooth.
  • Coat the Bites: Dip each cheesecake ball into the melted wafers, letting excess drip off. Use a spoon for touch-ups if needed. Place coated bites back onto the parchment paper.
  • Drizzle (Optional): Melt the white almond bark in a separate bowl and drizzle over the coated bites using a spoon or a small piping bag made from a sandwich bag.
  • Chill and Serve: Refrigerate the finished bites until the coating is firm and you’re ready to serve.
