Description

Strawberry Cheesecake Banana Pudding is a creamy layered dessert made with a buttery graham cracker crust, rich homemade custard, smooth cheesecake filling, fresh bananas, strawberries, and classic chessmen cookies. This easy no fuss dessert combines the comforting flavors of banana pudding with the richness of cheesecake for a beautiful and delicious treat perfect for gatherings and celebrations.


Ingredients

Custard

3 egg yolks
1 cup sugar
2 cups milk
2 tablespoons all purpose flour
4 tablespoons butter
1 tablespoon vanilla extract

Cheesecake Filling

2 packages cream cheese 8 oz each room temperature
1 cup powdered sugar
1 tablespoon vanilla extract
1 half cup whipping cream

Strawberry Glaze

2 cups fresh or frozen strawberries stems removed
3 fourths cup water
2 tablespoons sugar
1 tablespoon cornstarch mixed with 1 tablespoon water

Crust and Layers

1 and a half packs graham crackers crushed
1 and a half sticks butter melted
2 to 3 fresh bananas sliced
1 cup fresh strawberries sliced
1 pack chessmen cookies
Whipped cream for topping


Instructions

  1. Preheat oven to 350 degrees Fahrenheit. Pulse graham crackers in a food processor until fine crumbs form. Add melted butter and pulse until combined.
  2. Spray a baking dish with nonstick spray. Press the graham cracker mixture firmly into the bottom to create the crust. Bake for 8 to 10 minutes until lightly golden. Let cool completely.
  3. In a saucepan over medium high heat combine egg yolks, sugar, milk, and flour. Stir continuously for about 15 minutes until thick and smooth.
  4. Remove from heat and strain the custard through a sieve. Stir in butter and vanilla extract. Set aside to cool.
  5. In another saucepan combine strawberries, water, and sugar. Cook over medium high heat until the strawberries soften.
  6. Stir in the cornstarch slurry and cook until the glaze thickens. Blend until smooth and strain if desired. Let cool.
  7. In a mixing bowl beat cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  8. Gently fold whipped cream into the custard mixture to lighten the texture.
  9. Slice bananas and strawberries for layering.
  10. Spread a layer of cheesecake filling over the cooled graham cracker crust. Add a layer of chessmen cookies followed by sliced bananas and strawberries. Drizzle custard and strawberry glaze.
  11. Repeat the layers until the dessert is assembled, about two to three layers.
  12. Top with whipped cream, more cookies, fresh strawberries, and a drizzle of custard. Chill before serving.

Notes

For best results allow the dessert to chill for at least 2 hours before serving so the layers set properly.

Slice bananas right before assembling to keep them fresh.

Vanilla wafers can be used instead of chessmen cookies if desired.

Store leftovers covered in the refrigerator for up to 3 days.
