Ingredients

1 lb ground beef or half beef, half pork

1 cup finely chopped fresh spinach

3 cloves garlic, minced

¼ cup plain breadcrumbs

¼ cup grated Parmesan cheese

1 large egg, lightly beaten

½ tsp salt

¼ tsp black pepper

½ tsp Italian seasoning

1 cup mozzarella cheese, cubed

2 tbsp olive oil, for searing


Instructions

  1. Combine Ingredients: In a large mixing bowl, add the ground meat, spinach, garlic, breadcrumbs, Parmesan, egg, salt, pepper, and Italian seasoning. Mix gently until everything is just combined.
  2. Shape & Stuff: Take about 1 to 2 tablespoons of the mixture and press it flat in your palm.
  3. Sear to Perfection: Heat olive oil in a large skillet over medium heat. Add the meatballs in batches, avoiding overcrowding. Cook each batch for 4–5 minutes on all sides until browned and fully cooked through.
  4. Serve & Enjoy: Plate the meatballs warm. Serve with marinara sauce for dipping, over a bed of pasta, or garnished with basil and extra Parmesan.

Notes

Don’t overmix the meat mixture to ensure a tender texture.

Freeze cooked or uncooked meatballs in a single layer for quick future meals.
