2 large boneless, skinless chicken breasts, sliced horizontally into fillets

8 oz cream cheese, softened

2 cups fresh spinach, rinsed

2 tbsp olive oil, divided

4 oz shredded mozzarella cheese

3 garlic cloves, minced

1/2 tsp red pepper flakes (optional)

1/2 tsp salt

1/2 tsp black pepper

1/2 tsp Italian seasoning (optional)


Instructions

  1. Marinate the Chicken: Combine 1 tbsp olive oil, minced garlic, Italian seasoning, red pepper flakes, salt, and pepper in a Ziplock bag. Add the sliced chicken fillets, seal the bag, and gently knead to coat evenly. Let sit at room temperature for 10-15 minutes.
  2. Preheat the Oven: Place an oven rack in the center position and preheat to 400ºF (200ºC).
  3. Wilt the Spinach: Heat the remaining 1 tbsp olive oil in a skillet over medium heat. Add spinach and cook until just wilted. Remove from heat and set aside.
  4. Assemble the Casserole: Lay the marinated chicken fillets in a single layer in a baking dish. Evenly spread softened cream cheese on top, layer with wilted spinach, then sprinkle with shredded mozzarella.
  5. Bake: Bake uncovered for 20-30 minutes, until the chicken reaches an internal temperature of 165ºF (75ºC).
  6. Serve: Allow the casserole to cool for a few minutes before plating. Serve alongside roasted vegetables or cauliflower rice.

Notes

Use room-temp cream cheese for easy spreading.

Broil the last 2 minutes for a golden, bubbly cheese top.

Great with cauliflower rice or roasted veggies.
