Description
Southern Squash Casserole is a creamy cheesy baked side dish made with tender yellow squash, sharp cheddar cheese, and a buttery cracker topping. This classic Southern comfort recipe is easy to prepare and perfect for family dinners, potlucks, or holiday gatherings.
Ingredients
3 tablespoons unsalted butter
1/2 sleeve Club Ritz or Cheez It crackers crushed about 1 cup crumbs
3 medium yellow squash about 24 ounces sliced or cut into 1 inch pieces
1/2 yellow onion diced
1 large egg
1/3 cup mayonnaise
1 1/2 cups grated cheddar cheese
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Instructions
- Preheat oven to 350°F. Place butter in an 8×8 inch casserole dish and melt in the oven as it preheats.
- Once melted, add crushed crackers to the dish and toss to coat in butter. Transfer crumbs to a bowl and set aside, leaving the dish greased.
- In a large skillet, combine squash and onion with 1 cup water. Bring to a boil and cook about 10 minutes until squash is tender. Drain well in a colander and gently mash to remove excess moisture.
- In a large bowl, beat the egg. Stir in mayonnaise until smooth. Add cheddar cheese, salt, and pepper. Fold in drained squash mixture and mix well.
- Transfer mixture to the prepared baking dish. Top evenly with buttered cracker crumbs. Bake for about 30 minutes until center is set and topping is lightly golden. Cool 5 minutes before serving.
Notes
Drain the squash thoroughly to prevent a watery casserole.
For a smoother texture, mash the squash more completely.
Recipe can be doubled and baked in a 9×13 inch dish. Increase baking time by 5 to 10 minutes if needed.
Store leftovers in the refrigerator up to 5 days.
