Peach Filling:

8 fresh peaches, peeled, pitted, and sliced

¼ cup granulated sugar

¼ cup light brown sugar

¼ tsp ground cinnamon

⅛ tsp ground nutmeg

1 tsp fresh lemon juice

2 tsp cornstarch

Cobbler Topping:

2 cups all-purpose flour

½ cup granulated sugar

½ cup light brown sugar

2 tsp baking powder

1 tsp salt

12 tbsp unsalted butter, chilled and diced

½ cup boiling water

For Sprinkling:

3 tbsp granulated sugar


Instructions

  1. Preheat the Oven
    Preheat to 400°F (for dark or glass pans) or 425°F (for light-colored pans).
  2. Prepare the Peach Filling
    In a large mixing bowl, combine peaches, granulated and brown sugars, cinnamon, nutmeg, lemon juice, and cornstarch. Toss until peaches are evenly coated. Pour into a 2-quart baking dish and bake for 10 minutes.
  3. Make the Cobbler Topping
    In a separate bowl, whisk together flour, granulated sugar, brown sugar, baking powder, and salt. Add cold butter and cut it in using your hands or a pastry blender until the mixture forms a crumbly texture. Stir in boiling water until just combined.
  4. Assemble and Bake
    Remove the dish from the oven. Spoon the cobbler topping evenly over the warm peach filling. Sprinkle with the remaining 3 tablespoons of sugar. Set the baking dish on a tray and bake for around 30 minutes, or until the top is golden brown and the filling is bubbling.
  5. Cool and Serve
    Allow the cobbler to sit for 10 to 15 minutes before serving. Top with a scoop of vanilla ice cream for extra indulgence

Notes

Fresh peaches provide the best flavor, but thawed frozen or well-drained canned peaches can be used.
