For the Bread:

½ cup vegetable oil or olive oil

2 large eggs

1 cup granulated sugar

½ cup sour cream

1 tsp vanilla extract

1 large peach, finely peeled and diced

½ cup chopped pecans

1½ cups all-purpose flour, sifted

1 tsp baking soda

½ tsp sea salt

For the Pecan Praline Topping:

2 tbsp unsalted butter

½ cup chopped pecans

1 (14 oz) can sweetened condensed milk


Instructions

  1. Preheat & prep pan. Set oven to 350 °F and grease an 8½×4½″ loaf pan.
  2. Combine wet ingredients. In a large bowl, whisk together eggs and oil. Add sugar, then sour cream, vanilla, diced peaches, and pecans; mix until blended.
  3. Incorporate dry ingredients. Gradually stir in the sifted flour, baking soda, and sea salt until just combined—don’t overmix.
  4. Bake. Transfer the batter into the greased loaf pan and bake for 50 to 55 minutes. The bread is ready when the edges start to pull away from the sides or a toothpick inserted in the center comes out clean.
  5. Make praline topping. While baking, melt the butter in a small saucepan over medium-high heat. Add the pecans and sauté 5 minutes. Stir in sweetened condensed milk, simmer briefly, then take off the heat and let it cool slightly.
  6. Finish & drizzle. Once the loaf is cool, pour the praline drizzle over the top. Slice and enjoy!

Notes

Substitute Greek yogurt for sour cream for added protein.

Use frozen or canned peaches (drained and dried) if fresh isn’t available.

Make it gluten-free by swapping flour with a 1:1 gluten-free blend.

Store at room temperature for 2 days or refrigerate for up to 5 days.
