Description

1 pound ground beef
8 ounces egg noodles
1 can 15 ounces tomato sauce
1 half cup sour cream
1 cup small curd cottage cheese
1 and a half cups shredded cheese
1 quarter cup diced green onions
1 half teaspoon salt
1 half teaspoon ground black pepper
1 half teaspoon garlic powder


Instructions

1. Preheat and prepare

Preheat your oven to 350 degrees F. Lightly coat a casserole dish with non stick spray to prevent sticking.

2. Brown the beef

In a large skillet over medium heat, cook the ground beef until fully browned. Break it apart as it cooks. Drain off any excess grease to keep the casserole from becoming too heavy.

3. Add the sauce and seasoning

Stir the tomato sauce, salt, black pepper, and garlic powder into the cooked beef. Reduce the heat to low and let it simmer for about 5 minutes so the flavors blend together.

4. Cook the noodles

Prepare the egg noodles according to the package directions. Cook until just tender, then drain well.

5. Mix the creamy layer

In a large bowl, combine the sour cream, cottage cheese, diced green onions, and a pinch of black pepper. Fold in the drained noodles until they are evenly coated.

6. Layer the casserole

Spread half of the noodle mixture evenly in the prepared dish. Spoon half of the beef mixture over the noodles, then scatter half of the shredded cheese on top. Repeat the layering process with the remaining noodles, beef, and cheese.

7. Bake

Place the casserole in the oven and bake for about 25 minutes, or until the cheese is melted and bubbly. Let it rest for a few minutes before serving.

Notes

Beef: Ground sirloin works great, but ground turkey or chicken can be substituted. For a vegetarian option, use sautéed zucchini and mushrooms.

Cheese: Colby and Monterey Jack blend melts beautifully. Cheddar or mozzarella also work well.

Onions: Green onions add mild flavor, but they can be omitted if preferred.
