Ingredients
1 ½ pounds boneless beef chuck roast, thinly sliced into ¼-inch strips
1 cup low-sodium beef broth
½ cup low-sodium soy sauce
⅓ cup dark brown sugar
1 tablespoon sesame oil
3 teaspoons minced garlic (about 3 cloves)
2 tablespoons cornstarch
1 (12-ounce) bag frozen broccoli florets (about 3 cups)
Optional: freshly sliced green onions and sesame seeds for garnish

Make the sauce: In a medium bowl, whisk together beef broth, soy sauce, brown sugar, sesame oil, and minced garlic.

Prepare the beef: Arrange the sliced chuck roast pieces in a 4–7-quart slow cooker. Pour the sauce over the beef and toss to coat evenly.

Slow cook: Cover and cook on LOW for 2.5–3.5 hours until the beef is tender.

Thicken the sauce: About 1 hour before cooking time is up, remove ¼ cup of the cooking liquid. Combine it with cornstarch, whisk until smooth, then return the mixture to the slow cooker.

Add broccoli: In the final 30 minutes, stir in frozen broccoli florets. For softer broccoli, add it earlier or thaw it slightly before adding.

Notes
For enhanced flavor, add a splash of oyster or hoisin sauce.
Use toasted sesame oil for a deeper, nuttier taste.
