  • 1 cup granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • 2 packages Ready-to-Bake Sugar Cookies (24 cookies/pack)
  • Christmas-colored sprinkles (for topping)

Instructions

  1. Preheat & Prepare Pan: Preheat oven to 325°F (165°C). Lightly spray a 9″ springform pan with cooking spray and set aside.
  2. Make the Crust: Use one package of cookies to line the outer edge of the pan, working inward with the second package. Ensure each cookie touches, creating a seal. Bake for 8 minutes, or until cookies spread and fill gaps. Cool for 5 minutes.
  3. Prepare Cheesecake Filling: In a mixing bowl, beat softened cream cheese until creamy. Add sugar, vanilla, and almond extract, and mix until smooth. Add eggs one at a time, mixing slightly between each.
  4. Bake Cheesecake: Pour the cheesecake filling over the crust. Place a roasting pan with 2 inches of water on the oven’s bottom rack. Bake for 55 minutes, until edges set and center is slightly jiggly.
  5. Cool Gradually: Turn off the oven and crack the door open, allowing cheesecake to cool for 1 hour. Refrigerate for at least 4 hours, ideally overnight.
  6. Decorate: Remove cheesecake from springform pan and top with Christmas sprinkles.
