1 pound strawberries, hulled and halved

2 tablespoons honey

Juice of ½ lemon

4 sprigs fresh thyme (plus more for garnish)

2 slices rustic bread (1-inch thick)

1 tablespoon olive oil

¾ cup whole milk ricotta cheese

Pinch of sea salt


Instructions

  1. Preheat Oven: Set your oven to 400°F (200°C).
  2. Roast Strawberries: Place the halved strawberries in a medium baking dish. Drizzle with honey, squeeze the lemon juice over them, and scatter thyme sprigs on top. Roast for 20 minutes, stirring once halfway through.
  3. Toast Bread: Brush both sides of the rustic bread slices with olive oil. Toast in the oven for 1-2 minutes until golden and crispy.
  4. Whip Ricotta: In a food processor, blend the ricotta cheese for 30 seconds to a minute until smooth and fluffy.
  5. Assemble: Spread whipped ricotta evenly over the toasted bread slices. Top generously with the roasted strawberries.
  6. Garnish & Serve: Sprinkle a pinch of sea salt and additional thyme leaves. Serve immediately while warm.

Notes

Swap ricotta with goat cheese or mascarpone for a flavor twist.
