Ingredients
Scale
- package ladyfingers
- 1 cup pumpkin puree (not pie filling)
- 8 oz mascarpone cheese
- 1 cup heavy cream
- ¾ cup powdered sugar (divided)
- 2 tsp pumpkin spice
- 1 cup espresso or strong coffee (cooled)
- 1–2 tbsp rum (optional)
- Cocoa powder (for dusting)
Instructions
- In a chilled bowl, whip the heavy cream with ¼ cup powdered sugar until soft peaks form. Set aside.
- In another bowl, combine the pumpkin puree, mascarpone cheese, ½ cup powdered sugar, and pumpkin spice. Gently fold in half of the whipped cream.
- Quickly dip the ladyfingers into the cooled espresso (and rum, if using). Lay them in a single layer in your serving dish.
- Spread half of the pumpkin mixture over the ladyfingers. Add another layer of dipped ladyfingers on top.
- Spread the remaining pumpkin mixture over the second layer of ladyfingers, followed by the remaining whipped cream.
- Refrigerate for at least 4 hours, or overnight.
- Before serving, dust the top with cocoa powder. Enjoy!
Notes
- For a stronger pumpkin flavor, add a bit more pumpkin spice or cinnamon.
- If you’re not a fan of coffee, you can use hot chocolate or milk to soak the ladyfingers.
- For a dairy-free version, use dairy-free mascarpone and whipped cream alternatives.
