Ingredients
For the fritters
2 cups all purpose flour
2/3 cup granulated sugar
2 teaspoons baking powder
1 teaspoon salt
3/4 cup buttermilk
2 eggs lightly beaten
3 tablespoons butter melted
1 teaspoon vanilla extract
2 cups peeled and diced pineapple
vegetable oil for frying
For the glaze
3 cups powdered sugar
1/2 cup milk
1 teaspoon coconut extract

Instructions
- Heat about 3 inches of vegetable oil in a deep skillet or heavy pot over medium heat until it reaches about 360°F.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, whisk the buttermilk, eggs, melted butter, and vanilla extract until smooth.
- Add the wet ingredients to the dry ingredients and stir gently until just combined.
- Fold the diced pineapple into the batter.
- Drop spoonfuls of batter into the hot oil, making sure not to overcrowd the pot.
- Fry each fritter for about 1 to 2 minutes until golden brown, then flip and cook the other side.
- Remove fritters with a slotted spoon and place them on a paper towel lined baking sheet to drain.
- Repeat until all batter is used.
- In a bowl, whisk powdered sugar, milk, and coconut extract until smooth to make the glaze.
- Dip each fritter into the glaze until fully coated.
- Let the glaze set and sprinkle with shredded coconut if desired before serving.

Use ripe pineapple for the best natural sweetness and flavor.
