Description

Pineapple Fritters Recipe made with juicy pineapple folded into a light batter and fried until golden. These crispy fritters are topped with a simple sweet glaze and optional coconut for a tropical dessert that is easy to make and ready in about 40 minutes.


Ingredients

For the fritters
2 cups all purpose flour
2/3 cup granulated sugar
2 teaspoons baking powder
1 teaspoon salt
3/4 cup buttermilk
2 eggs lightly beaten
3 tablespoons butter melted
1 teaspoon vanilla extract
2 cups peeled and diced pineapple
vegetable oil for frying

For the glaze
3 cups powdered sugar
1/2 cup milk
1 teaspoon coconut extract

Optional topping
shredded coconut


Instructions

  1. Heat about 3 inches of vegetable oil in a deep skillet or heavy pot over medium heat until it reaches about 360°F.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, whisk the buttermilk, eggs, melted butter, and vanilla extract until smooth.
  4. Add the wet ingredients to the dry ingredients and stir gently until just combined.
  5. Fold the diced pineapple into the batter.
  6. Drop spoonfuls of batter into the hot oil, making sure not to overcrowd the pot.
  7. Fry each fritter for about 1 to 2 minutes until golden brown, then flip and cook the other side.
  8. Remove fritters with a slotted spoon and place them on a paper towel lined baking sheet to drain.
  9. Repeat until all batter is used.
  10. In a bowl, whisk powdered sugar, milk, and coconut extract until smooth to make the glaze.
  11. Dip each fritter into the glaze until fully coated.
  12. Let the glaze set and sprinkle with shredded coconut if desired before serving.
