Ingredients

Scale

For the Brownie Batter:

  • 1 cup (2 sticks) unsalted butter, melted
  • 2 cups granulated sugar
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup all-purpose flour

For the Peanut Butter Filling:

  • 1 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon vanilla extract

Instructions

  • Preheat the oven: Set your oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper, leaving some overhang for easy removal.
  • Make the brownie batter: In a large bowl, whisk together melted butter, sugar, cocoa powder, salt, and vanilla extract until smooth. Add the eggs one at a time, beating well after each addition. Gently fold in the flour until just combined. Set aside 1/3 of the batter.
  • Prepare the peanut butter filling: In another bowl, mix the peanut butter, powdered sugar, softened butter, and 1 teaspoon of vanilla extract until smooth and creamy.
  • Assemble the layers: Pour 2/3 of the brownie batter into the prepared baking pan and spread it evenly. Spoon the peanut butter filling on top and smooth it out. Gently spread the remaining brownie batter over the peanut butter layer.
  • Bake: Bake for 35-40 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Allow the brownies to cool completely in the pan before cutting into squares.

Notes

  • Be careful not to overmix the batter to ensure fudgy brownies.
  • For easier slicing, chill the brownies for 15-20 minutes in the fridge after they’ve cooled.
  • These brownies freeze well for up to 3 months—just thaw at room temperature before serving.
