Description

1 cup plain Greek yogurt

½ cup creamy peanut butter

1 tablespoon maple syrup or honey

1 teaspoon vanilla extract

2 tablespoons roasted and salted peanuts (optional)

1 cup chocolate chips or chopped chocolate (6 oz.)

2 tablespoons coconut oil


Instructions

  • Prepare your tray: Line a baking sheet with wax paper or a silicone baking mat.

  • Make the filling: In a mixing bowl, stir together Greek yogurt, peanut butter, maple syrup (or honey), and vanilla extract until the mixture is creamy and well blended.

  • Form the bars: Use an ice cream scoop to make 4 to 6 mounds of the yogurt mixture on the lined tray. Press a popsicle stick into each mound. Then top with more of the yogurt mixture and flatten gently with a spatula.

  • Add crunch: Sprinkle roasted and salted peanuts over each bar, pressing lightly so they stick.

  • Freeze: Place the tray in the freezer for at least 2 hours, or until the bars are fully frozen.

  • Make the chocolate coating: Combine the chocolate and coconut oil in a microwave-safe bowl. Microwave at 50% power for 30 seconds, then stir. Continue microwaving in 15-20 second bursts, stirring each time, until fully melted and smooth.

  • Dip the bars: Remove the frozen bars from the freezer and dip each one into the melted chocolate. Let any excess chocolate drip off, then return the bars to the tray.

  • Enjoy or store: Eat immediately, or return the bars to the freezer for later. Let them sit at room temperature for 5-10 minutes before eating to soften slightly.

Notes

Add mini chocolate chips to the yogurt mixture for more texture.

You can skip the popsicle sticks and make them as frozen yogurt bites or bars.

Store in the freezer in an airtight container for up to 2 weeks.
