Description

Peanut Butter and Butterscotch Haystacks are a quick and easy no-bake dessert made with just four ingredients. These sweet, salty, and crunchy treats come together in 15 minutes and are perfect for holidays, parties, or anytime you need a fast crowd-pleaser.

1 cup butterscotch chips

1/2 cup creamy peanut butter

1/2 cup salted peanuts

1 cup chow mein noodles


Instructions

  • Prepare the dry ingredients: In a large mixing bowl, add the salted peanuts and chow mein noodles. Gently toss them together so they’re evenly mixed.
  • Melt the chips and peanut butter: In a microwave-safe bowl or a medium saucepan over low heat, combine the butterscotch chips and creamy peanut butter. Heat in 30-second intervals in the microwave (or stir continuously on the stovetop) until completely melted and smooth.
  • Combine the mixture: Pour the melted butterscotch and peanut butter mixture over the bowl of peanuts and chow mein noodles. Using a spatula, gently fold everything together until all the ingredients are thoroughly coated.
  • Form the haystacks: Line a baking sheet or counter with wax paper. Drop spoonfuls of the mixture onto the paper to form little haystack-shaped mounds.
  • Cool and set: Allow the haystack cookies to cool at room temperature until they are firm and set. This usually takes about 30 minutes.
