1 ½ cups graham cracker crumbs

¾ cup powdered sugar

2 teaspoons vanilla extract

2 tablespoons fresh lemon juice

¾ cup cold heavy cream

For the Topping:

34 ripe peaches, thinly sliced

⅓ cup peach preserves

1 tablespoon fresh lemon juice


Instructions

Make the Crust

Mix graham cracker crumbs, melted butter, and sugar in a mixing bowl until well combined.
Firmly press the mixture into the base of a 9-inch springform pan.
Refrigerate for 10 minutes to set, or bake at 350°F for 8–10 minutes for extra firmness. Let cool.

2. Prepare the Filling

Beat the softened cream cheese with powdered sugar until smooth and fluffy. Add vanilla extract and lemon juice. In a separate bowl, beat the heavy cream until it forms soft peaks. Gently fold whipped cream into the cream cheese mixture until fully incorporated. Spread evenly over the crust and smooth the top.

3. Chill

Chill the assembled cheesecake in the refrigerator for a minimum of 4 hours, or overnight for optimal results.

4. Make the Glaze and Topping

In a saucepan over low heat, stir peach preserves and lemon juice until smooth and pourable. Toss with sliced peaches and let sit for 5–10 minutes to absorb flavor.

5. Assemble

Arrange glazed peach slices on top of the chilled cheesecake. Spoon any remaining glaze for added shine.

6. Serve

Slice with a knife warmed under hot water for clean edges. Serve chilled.

Notes

Use ripe, but firm peaches for the best texture and presentation.

Let the cream cheese come to room temperature for a smoother filling.

For a twist, add a pinch of cinnamon to the crust or substitute with vanilla wafers.
