Ingredients
For the Topping:
1/2 cup packed brown sugar
1/4 cup unsalted butter, melted
2 cups fresh peaches, peeled and sliced
For the Cake:
1/2 cup unsalted butter, at room temperature
3/4 cup granulated sugar
1 large egg, at room temperature
1 tsp pure vanilla extract
1 1/4 cups all-purpose flour
1 1/4 tsp baking powder
1/4 tsp salt
1/2 cup milk
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease a 9-inch cake pan and cover the bottom with a round piece of parchment paper.
- Stir together the brown sugar and melted butter in a small bowl, then spread the mixture evenly over the parchment-lined pan.
- Neatly arrange the peach slices on top of the brown sugar mixture.
- In a large bowl, cream the room-temperature butter with the granulated sugar until the mixture becomes fluffy (about 6 minutes).
- Add the egg and vanilla extract, beating until fully combined.
- In a different bowl, sift together the flour, baking powder, and salt.
- Slowly mix the dry ingredients into the butter mixture, alternating with the milk until just combined.
- Spoon the batter over the peaches and spread it evenly.
- Bake for 50 to 55 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes. Loosen the edges with a knife and invert it onto a serving plate.
- Carefully remove the parchment and replace any peaches that may have stuck.
- Serve either warm or at room temperature.
Notes
Use ripe, firm peaches for best texture. For extra flavor, sprinkle cinnamon over the peach layer. Store covered at room temp or refrigerate for longer freshness.
