For the Crust:

12 oz vanilla wafers

½ cup granulated sugar

4 tbsp unsalted butter, melted

For the Filling:

2 packages (8 oz each) cream cheese, softened

1 cup granulated sugar

1 (3 oz) box orange-flavored gelatin

1 cup boiling water

2 cups heavy cream

½ cup powdered sugar

½ tsp vanilla extract

Zest of one orange


Instructions

  • In a food processor, pulse vanilla wafers into fine crumbs. Mix in granulated sugar and melted butter; pulse to blend.

  • Press mixture into a 9-inch springform pan and chill in the freezer for 30 minutes.

  • Beat cream cheese with granulated sugar until smooth. Set aside.

  • Dissolve orange gelatin in boiling water; let it cool to room temp.

  • Whip heavy cream with powdered sugar, vanilla, and orange zest until stiff peaks form.

  • Divide whipped cream in half: fold one half into gelatin, the other into cream cheese mixture.

  • Spoon alternating layers of cream cheese and gelatin mixtures over crust. Smooth top.

  • Refrigerate for at least 4 hours, preferably overnight, until set.

Notes

Let cream cheese soften before mixing to ensure a smooth filling.

For a prettier presentation, garnish with orange zest, whipped cream, or orange slices.

This cheesecake sets better when chilled overnight.

You can substitute graham crackers or Golden Oreos for the crust.
