Description
No-Bake Lime Mousse Torte is a creamy, zesty dessert with a gingersnap crust, white chocolate filling, and fresh lime zest. A make-ahead delight perfect for parties or family gatherings.
Ingredients
2 cups gingersnap cookie crumbs
2 tbsp granulated sugar
5 tbsp unsalted butter, melted
1 (.25 oz) envelope unflavored gelatin
⅔ cup fresh lime juice
2 ½ cups heavy cream, divided
9 oz white chocolate, finely chopped
3 (8 oz) packages cream cheese, softened
1 cup granulated sugar
2 tbsp lime zest
Optional: whipped cream, raspberries, mint leaves for garnish
Instructions
Combine gingersnap crumbs, sugar, and melted butter. Press into the bottom and sides of a springform pan.
Sprinkle gelatin over lime juice and set aside to soften.
Heat ½ cup cream to a simmer, pour over white chocolate, and whisk until smooth. Stir in softened gelatin until dissolved. Cool to room temperature.
In a large bowl, whip the remaining cream to stiff peaks.
Beat cream cheese and sugar until smooth. Gradually mix in the chocolate mixture, then stir in lime zest.
Fold in the whipped cream. Pour filling over the prepared crust and smooth the top.
Cover and refrigerate overnight.
Garnish with whipped cream, raspberries, and mint leaves before serving.
Notes
Use freshly squeezed lime juice for the best flavor.
Chill overnight for perfect texture.
Freeze (without garnish) for up to 2 months.
