¾ cup boiling water

1 (3-ounce) box lime gelatin mix

1 (14-ounce) can sweetened condensed milk

½ cup bottled or fresh Key lime juice (about 10 Key limes)

¼ teaspoon kosher salt

Whipped cream (optional, for topping)


Instructions

  1. Prepare the crust:
    • Line an 8×8″ pan with parchment paper, creating a sling with 2 sheets.
    • Crush the graham crackers into fine crumbs.
    • Stir in sugar and salt, then mix in melted butter until evenly moistened.
    • Press firmly into the pan, reaching corners and edges.
  2. Make the filling:
    • Whisk gelatin mix into ¾ cup boiling water until dissolved. Let cool ~5 minutes in fridge—don’t let it set.
    • Process room​‑temp cream cheese, condensed milk, key lime juice, and salt until smooth.
    • With the food processor running, pour in the cooled gelatin and blend until fully incorporated.
  3. Assemble bars:
    • Pour the filling atop the crust, smoothing the surface.
    • Cover and refrigerate until firm—about 6 hours or overnight is best.
  4. Serve:
    • Carefully lift the chilled dessert from the pan using the parchment paper sling and place it on a cutting board.
    • For clean, professional-looking slices, use a sharp knife and wipe it clean between each cut.
    • Optionally, top with a swirl of whipped cream before serving.
