4 tbsp butter, room temperature

1/2 cup graham cracker crumbs, crushed

4 cups powdered sugar

10 oz chocolate chips or almond bark


Instructions

  • In a large mixing bowl, combine softened cream cheese and butter. Mix until the texture is smooth and well blended.
  • Stir in the crushed graham cracker crumbs, mixing until fully incorporated.
  • Gradually add powdered sugar, one cup at a time, mixing thoroughly after each addition until the mixture becomes thick and dough-like.
  • Cover the bowl and place it in the refrigerator for at least 1 hour so the mixture can set properly.
  • Once chilled, scoop out portions of the mixture and roll into small balls using your hands. Place them on a parchment-lined tray.
  • Chill the rolled bites in the refrigerator for another 10 to 20 minutes to help them set and maintain shape.
  • Meanwhile, melt the chocolate chips or almond bark according to package instructions until smooth and pourable.
  • Dip each cheesecake bite into the melted chocolate, ensuring it’s completely coated. Use a fork to lift each one and allow any excess chocolate to drip back into the bowl.
  • Return each dipped bite to the parchment-lined tray. Let them cool at room temperature or refrigerate until the chocolate hardens.
