- In a large mixing bowl, combine softened cream cheese and butter. Mix until the texture is smooth and well blended.
- Stir in the crushed graham cracker crumbs, mixing until fully incorporated.
- Gradually add powdered sugar, one cup at a time, mixing thoroughly after each addition until the mixture becomes thick and dough-like.
- Cover the bowl and place it in the refrigerator for at least 1 hour so the mixture can set properly.
- Once chilled, scoop out portions of the mixture and roll into small balls using your hands. Place them on a parchment-lined tray.
- Chill the rolled bites in the refrigerator for another 10 to 20 minutes to help them set and maintain shape.
- Meanwhile, melt the chocolate chips or almond bark according to package instructions until smooth and pourable.
