For the Cookie Dough:
- 1/2 cup butter
- 3/4 cup brown sugar
- 1/4 cup sugar
- 1/2 cup peanut butter
- 2 eggs
- 1 tsp vanilla extract
- 1 3/4 cups quick oats
- 1 cup flour
- 1 tsp baking soda
- 1/4 tsp baking powder
- 1 cup M&Ms
- 1/2 cup chocolate chips
For the Cheesecake Filling:
- 8 oz cream cheese
- 1/4 cup brown sugar
- 1/4 cup peanut butter
- 1 egg
- 1 tbsp milk
For the Peanut Butter Icing:
- 1/2 cup butter
- 1/3 cup peanut butter
- 2 cups powdered sugar
- 1–2 tbsp water or milk
- Chocolate sauce, optional for serving
Instructions
- Preheat oven to 350°F (175°C) and grease a 9-inch pie pan.
- For the cookie dough, cream together butter, brown sugar, and sugar until fluffy (about 3-4 minutes).
- Add peanut butter, eggs, and vanilla extract, and mix until well combined.
- Mix in oats, flour, baking soda, and baking powder until a dough forms. Stir in M&Ms and chocolate chips.
- For the cheesecake filling, beat cream cheese, brown sugar, and peanut butter until smooth. Add egg and milk, and combine.
- Press 3/4 of the cookie dough into the pie pan, spreading it up the sides.
- Spread the cheesecake filling over the cookie dough layer.
- Drop spoonfuls of the remaining cookie dough on top.
- Bake for 20-25 minutes, then refrigerate until firm.
- For the icing, cream butter and peanut butter together. Gradually add powdered sugar and mix until smooth, adding water or milk as needed.
- Pipe icing around the edges of the pie and drizzle with chocolate sauce, if desired.
Notes
- For a more colorful pie, sprinkle extra M&Ms on top before baking!
- Make sure to refrigerate the pie until firm to ensure clean slices.
