For the Cookie Dough:

  • 1/2 cup butter
  • 3/4 cup brown sugar
  • 1/4 cup sugar
  • 1/2 cup peanut butter
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 3/4 cups quick oats
  • 1 cup flour
  • 1 tsp baking soda
  • 1/4 tsp baking powder
  • 1 cup M&Ms
  • 1/2 cup chocolate chips

For the Cheesecake Filling:

  • 8 oz cream cheese
  • 1/4 cup brown sugar
  • 1/4 cup peanut butter
  • 1 egg
  • 1 tbsp milk

For the Peanut Butter Icing:

  • 1/2 cup butter
  • 1/3 cup peanut butter
  • 2 cups powdered sugar
  • 12 tbsp water or milk
  • Chocolate sauce, optional for serving

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9-inch pie pan.
  2. For the cookie dough, cream together butter, brown sugar, and sugar until fluffy (about 3-4 minutes).
  3. Add peanut butter, eggs, and vanilla extract, and mix until well combined.
  4. Mix in oats, flour, baking soda, and baking powder until a dough forms. Stir in M&Ms and chocolate chips.
  5. For the cheesecake filling, beat cream cheese, brown sugar, and peanut butter until smooth. Add egg and milk, and combine.
  6. Press 3/4 of the cookie dough into the pie pan, spreading it up the sides.
  7. Spread the cheesecake filling over the cookie dough layer.
  8. Drop spoonfuls of the remaining cookie dough on top.
  9. Bake for 20-25 minutes, then refrigerate until firm.
  10. For the icing, cream butter and peanut butter together. Gradually add powdered sugar and mix until smooth, adding water or milk as needed.
  11. Pipe icing around the edges of the pie and drizzle with chocolate sauce, if desired.

Notes

  • For a more colorful pie, sprinkle extra M&Ms on top before baking!
  • Make sure to refrigerate the pie until firm to ensure clean slices.
