These Mini Apple Crisp Bites are the perfect little dessert treats, combining the cozy flavors of baked apples, cinnamon, and a crunchy oat topping all wrapped in a buttery pie crust.     • 3 medium apples (Granny Smith, peeled and diced)
    • 1/4 cup granulated sugar
    • 1/2 teaspoon ground cinnamon
    • 1 teaspoon lemon juice
    • 1 tablespoon all-purpose flour
  • For the crisp topping:
    • 1/2 cup rolled oats
    • 1/3 cup brown sugar
    • 1/4 cup all-purpose flour
    • 1/2 teaspoon ground cinnamon
    • 1/4 teaspoon ground nutmeg
    • 4 tablespoons cold butter, cubed
  • For the base:
    • 1 sheet refrigerated pie crust (or homemade)

Instructions

  • Preheat the oven to 350°F (175°C). Grease a mini muffin tin and set aside.
  • Roll out the pie crust and cut it into circles using a cookie cutter or glass. Press each dough circle into the prepared mini muffin tin.
  • In a bowl, toss together the diced apples, sugar, cinnamon, lemon juice, and flour until well combined.
  • In another bowl, mix the oats, brown sugar, flour, cinnamon, and nutmeg. Add the cold butter cubes and blend with your fingers or a pastry cutter until the mixture becomes crumbly.
  • Spoon the apple filling into the pie crust cups, and sprinkle the crisp topping generously over each one.
  • Bake for 15-18 minutes, or until the crust is golden brown and the topping is crisp and bubbly.
  • Let cool in the tin for a few minutes before transferring to a wire rack. Serve warm, and enjoy!
