- 1/2 cup rolled oats
- 1/3 cup brown sugar
- 1/4 cup all-purpose flour
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 4 tablespoons cold butter, cubed
- For the base:
- 1 sheet refrigerated pie crust (or homemade)
Instructions
- Preheat the oven to 350°F (175°C). Grease a mini muffin tin and set aside.
- Roll out the pie crust and cut it into circles using a cookie cutter or glass. Press each dough circle into the prepared mini muffin tin.
- In a bowl, toss together the diced apples, sugar, cinnamon, lemon juice, and flour until well combined.
- In another bowl, mix the oats, brown sugar, flour, cinnamon, and nutmeg. Add the cold butter cubes and blend with your fingers or a pastry cutter until the mixture becomes crumbly.
- Spoon the apple filling into the pie crust cups, and sprinkle the crisp topping generously over each one.
- Bake for 15-18 minutes, or until the crust is golden brown and the topping is crisp and bubbly.
- Let cool in the tin for a few minutes before transferring to a wire rack. Serve warm, and enjoy!
