Ingredients
3 tbsp olive oil, divided
1 medium onion, diced
1 tbsp garlic, minced
1 cup baby spinach, chopped
1 lb ground chicken
½ cup breadcrumbs
¼ cup Greek yogurt
2 tbsp fresh dill, finely chopped
1 tbsp lemon juice
1 tsp dried oregano
½ tsp paprika
½ tsp ground cumin
½ tsp salt
¼ tsp ground black pepper
Instructions
Sauté Aromatics: Add the chopped onion and minced garlic to the pan, cooking for 2–3 minutes until they become soft and golden brown.
Add Spinach: Stir in chopped spinach and cook for an additional minute until wilted. Remove from heat and let cool for 5 minutes.
Mix Ingredients: In a large bowl, combine the ground chicken with the cooled onion-spinach mixture, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and black pepper. Stir until everything is evenly mixed.
Chill: Shape the mixture into a firm ball, cover the bowl with plastic wrap, and refrigerate for at least 30 minutes to allow flavors to meld and mixture to firm up.
Shape the Patties: Portion the mixture into 12 even pieces and form each one into a patty about half an inch thick.
Cook the Patties: In a skillet over medium-high heat, warm the remaining tablespoon of olive oil. Cook patties in batches, about 3–5 minutes per side, until golden brown and the internal temperature reaches 165°F (74°C).
Serve: Enjoy warm, paired with your choice of sides or accompaniments.
Notes
For a gluten-free version, use gluten-free breadcrumbs.
Store in an airtight container for up to 4 days.
Freeze uncooked patties on a tray, then bag. Cook from frozen by adding a few extra minutes.
Optional: Bake at 400°F for 15–20 minutes, flipping halfway through.
