Ingredients

1 stick butter (1/2 cup)

1 cup all-purpose flour

1 1/2 tsp baking powder

1/4 tsp salt

1 cup white granulated sugar

1 cup buttermilk

1 tsp vanilla extract

1 tsp lemon extract

22 oz can lemon pie filling


Instructions

  • Preheat your oven to 350 degrees Fahrenheit. Place the stick of butter in a 9×9-inch baking dish and put it in the oven for 4 to 6 minutes, until the butter is fully melted. Remove the dish from the oven and set aside, keeping the oven on.
  • In a medium bowl, whisk together the flour, baking powder, and salt. Add the sugar and whisk again to combine evenly.
  • Pour in the buttermilk, along with the vanilla and lemon extracts. Gently stir with a spatula until just combined. Be careful not to overmix.
  • Pour the batter over the melted butter in the baking dish. Do not stir or mix the layers.
  • Spoon the lemon pie filling over the batter in small dollops, leaving spaces so the cobbler can rise and bake through. Again, do not mix.
  • Bake for 45 to 55 minutes, or until the top is golden brown, the edges are crispy, and the sides have slightly pulled away from the dish.
  • Cool for a few minutes before serving. Enjoy warm, topped with vanilla ice cream, whipped cream, a drizzle of honey, or even a bit of lemon zest.

Notes

Use real buttermilk for best results or make your own with milk and lemon juice.

Avoid stirring the batter and pie filling to achieve the magic cobbler effect.
