Ingredients
For the Creamy Sauce:
8 oz cream cheese
1 cup chicken broth
½ tsp onion powder
½ tsp garlic powder
¼ tsp salt
¼ tsp black pepper
For the Casserole:
1 tbsp butter (for greasing)
3 cups cooked chicken breast (shredded or chopped)
6 slices Swiss cheese
For the Topping:
2 cups pork rind crumbs
1 cup grated Parmesan cheese
¼ cup melted butter
Instructions
Prepare the Sauce: In a medium saucepan over medium heat, combine cream cheese, chicken broth, onion powder, garlic powder, salt, and pepper. Whisk until the mixture is smooth and creamy.
Preheat Oven: Set your oven to 375°F (190°C).
Assemble the Casserole:
Grease a 9×13-inch casserole dish with butter.
Evenly spread the cooked chicken across the bottom of the dish.
Pour the creamy sauce over the chicken, ensuring it’s well-covered.
Layer the Swiss cheese slices over the sauce.
Add the Topping: In a bowl, mix the pork rind crumbs, grated Parmesan, and melted butter. Distribute the topping mixture evenly across the surface of the casserole.
Bake: Place the casserole in the preheated oven and bake for 30 minutes, or until the top is golden brown and crispy.
Notes
Substitute pork rind crumbs with crushed almonds or seeds for a pork-free option.
Use low-fat cheese and cream cheese for a lighter version.
Add steamed broccoli or spinach for extra veggies.
