1 box (3.4 oz) instant lemon pudding mix

1½ cups half and half

8 oz cream cheese, softened

½ cup powdered sugar

8 oz whipped topping, thawed

Blueberry Layer

1 can (21 oz) blueberry pie filling

8 oz whipped topping, thawed (for top layer)


Instructions

  1. Prepare the Crust:
    • Crush graham crackers with sugar in a food processor until finely ground.
    • Gradually pour in melted butter while mixing on low speed until crumbs are evenly coated.
    • Firmly press the crumb mixture into the bottom of a 9×13 pan. Freeze for 20 minutes.
  2. Make the Lemon Cheesecake Layer:
    • In a medium bowl, whisk lemon pudding mix with half and half until thickened. Let sit for 5 minutes.
    • In a separate bowl, whip the softened cream cheese and powdered sugar together until the mixture is completely smooth.
    • Combine the thickened pudding with cream cheese mixture, then fold in whipped topping.
    • Spread this mixture evenly over the chilled crust.
  3. Add the Blueberry Layer:
    • Carefully spoon the blueberry pie filling over the lemon layer and spread it evenly.
  4. Final Touch:
    • Evenly layer the remaining whipped topping over the blueberry mixture.
    • Seal the dish with plastic wrap and chill in the refrigerator for a minimum of 8 hours, ideally overnight, to fully set.
  5. Serve:
