Ingredients
1 1/4 pounds ground beef
12 ounces zucchini, cubed
1 teaspoon fine sea salt
1/4 teaspoon black pepper
2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon Italian seasoning
4 oz cream cheese, cubed
1/2 cup shredded cheddar cheese, divided
1/2 cup shredded mozzarella cheese, divided
2 tablespoons chopped parsley, for garnish

Instructions
- Preheat your oven to 400°F and mist a 2-quart casserole dish with olive oil spray. Set aside.
- Brown the beef in a large nonstick skillet over medium-high heat, giving the pan a light spray of oil.
- Add seasonings: sprinkle in salt, pepper, garlic powder, onion powder, and Italian seasoning. Cook while breaking up the beef into crumbles until it’s fully browned, about 5 minutes.
- Stir in zucchini during the final minute of cooking. Mix thoroughly.
- Melt in cream cheese, stirring constantly until it’s completely incorporated and creamy.
- Fold in cheese by mixing in 1/4 cup each of cheddar and mozzarella.
- Assemble the casserole by spreading the mixture into your prepared baking dish and topping it with the remaining cheese.
- Bake for 10 minutes, or until the cheese is melted and bubbling with a golden top.
- Finish with parsley and serve immediately.
Notes
Substitute yellow squash or eggplant for zucchini.
Add bell peppers, mushrooms, or shredded cabbage to boost fiber.
