1 lb ground beef

1 lb Italian sausage

1 yellow onion, chopped

3 cloves garlic, minced

24 oz jar marinara or pasta sauce

1 tsp dried oregano

1/2 tsp black pepper

1/2 tsp kosher salt

Cheese Filling:

1 1/2 cups full-fat cottage cheese

1 egg

1/2 cup shredded Parmesan cheese

1 tsp dried parsley

1/2 tsp salt

1/2 tsp black pepper

Assembly:

12 lasagna noodles

3 cups shredded mozzarella cheese

2 cups shredded baby Swiss cheese


Instructions

  1. Preheat Oven: Set your oven to 350°F and lightly grease a 9×13-inch baking dish.
  2. Make the Sauce: In a large saucepan over medium-high heat, cook the ground beef, Italian sausage, and chopped onion until browned. Drain excess fat. Stir in minced garlic, marinara sauce, oregano, black pepper, salt, and red pepper flakes if using. Let it simmer on low heat while you prepare the other ingredients.
  3. Cook Noodles: Bring a large pot of salted water to a boil. Add a splash of oil and cook lasagna noodles for about 2 minutes less than package instructions. Drain and arrange them flat on aluminum foil to prevent them from sticking together.
  4. Prepare Cheese Filling: In a mixing bowl, combine the cottage cheese, egg, Parmesan, parsley, salt, and pepper until fully blended.
  5. Assemble the Lasagna:
    • Spread a thin layer of meat sauce on the bottom of the baking dish.
    • Lay 4 noodles lengthwise over the sauce.
    • Spread half of the shredded mozzarella and Swiss cheese over noodles.
    • Layer 4 more noodles, then spoon over half of the remaining meat sauce.
    • Evenly distribute the cottage cheese mixture over the sauce.
    • Top with 3 more noodles, the rest of the meat sauce, and the remaining cheese.
  6. Bake: Cover with foil and bake for 35-40 minutes, removing the foil in the last 10 minutes to allow the top to brown.
