Instant Pot Salisbury Steak is a quick, 35-minute dinner that brings together tender beef patties, savory mushroom gravy, and classic comfort—perfect for busy families. Save this easy recipe for a satisfying weeknight meal!

Ingredients

Scale

For the Beef Patties:

pounds lean ground beef

1 egg yolk

⅓ cup Panko bread crumbs

3 tablespoons milk

Salt and pepper, to taste

For the Gravy:

8 ounces mushrooms, sliced

½ onion, sliced

1½ cups low-sodium beef broth

1 packet (1 ounce) brown gravy mix

1 tablespoon tomato paste

1 tablespoon Dijon mustard

2 tablespoons chopped fresh parsley

1 tablespoon Worcestershire sauce

2 tablespoons cornstarch

4 tablespoons water

Instructions

  1. Layer Vegetables: Add the sliced onions and mushrooms directly to the base of the Instant Pot.
  2. Make the Beef Patties: In a large bowl, combine the ground beef, egg yolk, Panko bread crumbs, milk, salt, and pepper. Mix until just combined, then form into 6 equal patties.
  3. Brown the Patties: Using the sauté function on the Instant Pot or a separate skillet over medium-high heat, brown the patties for about 3 minutes on each side.
  4. Assemble the Dish: Place the browned patties over the onions and mushrooms. In a bowl, whisk together the beef broth, brown gravy mix, tomato paste, Dijon mustard, Worcestershire sauce, and parsley. Pour over the patties.
  5. Cook Under Pressure: Secure the Instant Pot lid and cook on high pressure for 18 minutes. Quickly release the pressure when finished.
  6. Thicken the Gravy: Remove patties and set aside. Turn Instant Pot to sauté. Mix cornstarch and water to form a slurry. Stir into the gravy and cook until thickened.
  7. Serve: Return patties to coat with gravy. Serve over mashed potatoes, rice, or noodles.

Notes

Browning patties in a skillet helps with ease and better browning.

Adjust cornstarch for preferred gravy thickness.

Ideal for meal prep—store and reheat easily.
