  • 1 pound farfalle (bowtie) pasta
  • 1 pound ground beef (90/10 ground sirloin recommended)
  • 1 jar vodka sauce (24 ounces)
  • 3 cups unsalted beef stock (or substitute with chicken stock)
  • 1 tablespoon Italian seasoning
  • 1 tablespoon dried minced onion
  • 1½ teaspoons garlic powder
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • 1½ cups mozzarella cheese, shredded
  • ½ cup parmesan cheese, grated

Instructions

  • Cook Ground Beef: Set the Instant Pot to ‘Sauté’ mode and wait until it reads ‘Hot.’ Add the ground beef, breaking it into small pieces, and cook until browned (about 6-8 minutes).
  • Season the Beef: Add Italian seasoning, minced onion, garlic powder, salt, and pepper. Stir and cook for another 2 minutes.
  • Add Beef Stock: Cancel the ‘Sauté’ mode, add the beef stock, and deglaze the bottom of the pot.
  • Layer Pasta and Sauce: Place the pasta on top, gently pushing it into the liquid but not stirring. Layer the vodka sauce on top of the pasta without mixing.
  • Pressure Cook: Close the lid, set the Instant Pot to ‘Sealing,’ and select ‘Manual’ or ‘Pressure Cook’ on high for 5 minutes.
  • Natural Pressure Release: Allow a 2-minute NPR (natural pressure release), then release any remaining pressure. Carefully open the lid once the pin drops.
  • Add Cheeses: Stir in mozzarella and parmesan until melted. Serve warm!

Notes

  • To avoid pasta sticking, don’t stir it into the sauce before pressure cooking.
  • Swap ground beef with ground turkey for a lighter option.
  • For added veggies, stir in baby spinach or diced bell peppers after pressure cooking
