Impossible Taco Pie brings bold taco flavor into one easy, cheesy, oven-baked dinner. This family favorite is quick, comforting, and perfect for busy nights

1 1/2 lbs lean ground beef
1 packet taco seasoning mix
1 (4.5 oz) can diced green chiles
1/2 cup salsa
1 cup shredded cheddar cheese
1/2 cup Bisquick baking mix
1 cup milk
3 large eggs
Kosher salt and freshly ground black pepper, to taste
Fresh cilantro, chopped (for garnish)
Instructions
- Preheat the Oven: Set your oven to 400°F (200°C) and grease a 9-inch pie plate with nonstick cooking spray.
- Cook the Beef: In a medium skillet over medium heat, cook the ground beef until it’s fully browned and no longer pink. Drain off any excess grease.
- Add Flavor: Stir in the taco seasoning, diced green chiles, and salsa. Let the mixture simmer for a couple of minutes to absorb the flavors.
- Assemble the Pie: Spread the beef mixture evenly in the greased pie plate. Sprinkle the shredded cheddar cheese evenly on top.
- Make the Batter: In a separate bowl, whisk together the Bisquick mix, milk, and eggs until well combined.
- Bake: Pour the batter evenly over the beef and cheese. Bake for 25 to 30 minutes, or until the top is golden brown and the center is set.
- Serve: Let it cool slightly, then slice and serve. Garnish with freshly chopped cilantro and your favorite taco toppings.

Let the pie rest for 5–10 minutes before slicing for best results. Customize toppings to your liking—try sour cream, avocado, or jalapeños.
