2 cups chopped onions

1 pound fresh mushrooms, sliced

2 cups chicken broth (or vegetable broth)

1 tablespoon soy sauce

1 tablespoon Hungarian paprika

2 teaspoons dried dill weed

1 cup whole milk

3 tablespoons all-purpose flour

1/2 cup sour cream

1/4 cup chopped fresh parsley

2 teaspoons lemon juice

1 teaspoon salt

Ground black pepper, to taste


Instructions

  • Sauté the onions: In a large soup pot, melt the butter over medium heat. Add chopped onions and cook for about 5 minutes, stirring occasionally, until they become soft and translucent.
  • Cook the mushrooms: Add the sliced mushrooms to the pot and continue to cook for another 5 minutes until they’re tender and have released their juices.
  • Add broth and spices: Stir in the chicken broth, soy sauce, paprika, and dill. Reduce the heat to low, cover the pot, and let the soup simmer gently for 15 minutes.
  • Create a creamy base: In a separate bowl, whisk the milk and flour together until smooth, then slowly add it to the soup while stirring. Cover the pot once more and simmer for another 15 minutes, stirring occasionally to prevent sticking.
  • Finish with creaminess: Stir in the sour cream, fresh parsley, lemon juice, salt, and black pepper. Let the soup warm through for about 3 to 5 minutes, ensuring all ingredients are well incorporated.
  • Serve and enjoy: Dish into bowls and serve immediately with crusty bread or a fresh, light salad.

Notes

For a vegetarian version, use vegetable or mushroom broth. You can also substitute Greek yogurt for sour cream and use gluten-free flour if needed. The soup tastes even better the next day!
