Ingredients

4 boneless, skinless chicken breasts, chopped

Salt and freshly ground black pepper, to taste

1 tbsp vegetable or canola oil

1/2 cup yellow onion, diced

2 garlic cloves, minced

1/2 cup low-sodium soy sauce (Tamari for gluten-free)

1/4 cup ketchup

1/4 tsp red pepper flakes

2 tsp sesame oil

1/2 cup honey

2 tbsp cornstarch

3 tbsp cold water

2 scallions, chopped

Cooked rice and roasted broccoli for serving (optional)

Chopped scallions and sesame seeds for garnish (optional)


Instructions

  1. Season the chopped chicken with salt and pepper.
  2. Preheat your Instant Pot using the Sauté or Browning function. Once hot, add oil, diced onion, minced garlic, and the seasoned chicken. Sauté for about 3 minutes until the onion softens.
  3. Add soy sauce, ketchup, and red pepper flakes. Stir well, then lock the lid in place.
  4. Set to High Pressure for 3 minutes. Once done, perform a quick pressure release.
  5. Stir in sesame oil and honey once the lid is safely removed.
  6. Mix cornstarch and cold water in a small bowl to form a slurry. Add to the pot.
  7. Simmer using the Sauté setting, stirring constantly until the sauce thickens.
  8. Add chopped scallions and serve hot over rice. Garnish with more scallions and sesame seeds if desired. Pair with roasted broccoli for a balanced meal.

Use maple syrup or agave if avoiding honey.
