2 lbs boneless, skinless chicken thighs

1 tablespoon olive oil

Instructions

  • Create the glaze: In a small saucepan over medium-high heat, stir together orange juice, apple cider vinegar, light brown sugar, honey, chili powder, ground coriander, and ground cumin. Bring to a gentle boil, then reduce to medium heat and simmer for 35–45 minutes, or until the mixture is reduced to about 1 cup—this concentrates the flavors and thickens the sauce nicely.

  • Cook the chicken: While the glaze reduces, heat olive oil in a medium skillet over medium-high heat. Season chicken thighs with salt and pepper. Sear each side for 3–4 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and is no longer pink inside.

  • Glaze it up: Pour—or brush—the reduced glaze over the chicken in the skillet. Allow everything to simmer together for 1–2 minutes so each piece is luxuriously coated with the shiny glaze.

  • Plate and serve: Transfer to plates or a serving dish and spoon any remaining glaze over the top.
