1 unbaked 9-inch pie crust

1 egg white, beaten

¾ cup water

½ cup granulated sugar

3½ tablespoons cornstarch

3 ounces strawberry gelatin mix

pounds fresh strawberries, hulled and halved

Instructions

  1. Prepare the Crust
    Preheat the oven to 425°F. Spray a 9-inch pie plate lightly with nonstick spray. Gently place the pie crust into the pie dish, poke holes in the bottom with a fork, then cover it with foil and fill with pie weights. Bake for 10 minutes.
  2. Brush and Bake Again
    Remove the weights and foil. Brush the inside of the crust with beaten egg white and bake for another 8–10 minutes, until golden brown. Cool completely.
  3. Make the Glaze
    Combine the sugar and cornstarch in a medium-sized saucepan, whisking them together until fully blended. Gradually whisk in the water. Heat over medium-high, whisking constantly, until thickened (about 2–3 minutes). Remove from heat, stir in the gelatin until dissolved, and let it sit for 5 minutes.
  4. Assemble the Pie
    Place the strawberries in the cooled crust. Pour the gelatin glaze evenly over the berries, ensuring all are coated.
  5. Chill and Serve
    Chill in the refrigerator for a minimum of 4 hours, or until the filling has completely set. Top with whipped topping before serving, if desired.

Notes

Use ripe, firm strawberries for the best texture.

Add a thin layer of cream cheese under the berries for a rich twist.
