1 unbaked 9-inch pie crust
1 egg white, beaten
¾ cup water
½ cup granulated sugar
3½ tablespoons cornstarch
3 ounces strawberry gelatin mix
1½ pounds fresh strawberries, hulled and halved

Instructions
- Prepare the Crust
Preheat the oven to 425°F. Spray a 9-inch pie plate lightly with nonstick spray. Gently place the pie crust into the pie dish, poke holes in the bottom with a fork, then cover it with foil and fill with pie weights. Bake for 10 minutes. - Brush and Bake Again
Remove the weights and foil. Brush the inside of the crust with beaten egg white and bake for another 8–10 minutes, until golden brown. Cool completely. - Make the Glaze
Combine the sugar and cornstarch in a medium-sized saucepan, whisking them together until fully blended. Gradually whisk in the water. Heat over medium-high, whisking constantly, until thickened (about 2–3 minutes). Remove from heat, stir in the gelatin until dissolved, and let it sit for 5 minutes. - Assemble the Pie
Place the strawberries in the cooled crust. Pour the gelatin glaze evenly over the berries, ensuring all are coated. - Chill and Serve
Chill in the refrigerator for a minimum of 4 hours, or until the filling has completely set. Top with whipped topping before serving, if desired.
Notes
Use ripe, firm strawberries for the best texture.
Add a thin layer of cream cheese under the berries for a rich twist.
