Ingredients

½ cup light brown sugar

½ cup white granulated sugar

1 large egg

1 tsp vanilla extract

1 ½ cups all-purpose flour

¾ tsp baking powder

½ tsp baking soda

1 ½ cups canned peach halves, diced

¾ cup light brown sugar (for filling)

¼ cup salted butter, softened (for streusel)

1 cup light brown sugar (for streusel)

¼ cup all-purpose flour (for streusel)

¼ tsp cinnamon (optional)


Instructions

  1. Preheat & Prep: Preheat your oven to 350°F. Prepare a baking sheet by lining it with parchment paper or a non-stick silicone mat.
  2. Make the Dough: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth. Add the egg and vanilla extract, mixing until fully incorporated. Gradually fold in the flour, baking powder, and baking soda until evenly combined.
