2 pounds fresh or frozen peach slices (peeled and pitted)
2/3 cup granulated sugar (adjust to taste)
Juice of 1/2 lemon
2 tablespoons apple juice or water
Instructions
- Combine Ingredients: Place the peach slices, sugar, lemon juice, and apple juice (or water) into the bowl of your slow cooker. Stir gently to combine all ingredients.
- Cook on Low: Cover and cook on the low setting for 6 to 8 hours. Stir occasionally to ensure the peaches cook evenly and nothing sticks to the bottom. The peaches should become very soft and fragrant.
- Blend Until Smooth: Once the peaches have softened and the mixture has thickened slightly, use an immersion blender to puree the contents directly in the slow cooker until completely smooth. Alternatively, carefully transfer the mixture to a countertop blender in batches.
- Reduce Further: If needed, return the pureed mixture to the slow cooker. Cook uncovered on low for an additional 1 to 2 hours, stirring occasionally, until the peach butter reaches a thick, spreadable consistency.
- Cool and Store: Let the peach butter cool slightly before transferring it to sterilized jars. Once cooled completely, store in the refrigerator for up to 2 weeks or freeze for long-term storage.
Notes
Use ripe peaches for the best flavor. Frozen peaches work too—just thaw before using. Adjust sugar based on peach sweetness. For a flavor twist, add cinnamon or vanilla extract.
