1/2 cup maple syrup or raw honey

1/3 cup fresh lime juice (approx. 2 large limes)

1/8 tsp pink Himalayan salt

1/2 cup virgin coconut oil, melted

Instructions

  1. Prepare the crust: In a food processor, blend almonds, dates, salt, and vanilla until a sticky crumble forms. If the mixture is too dry, add a splash of water to help it come together.
  2. Form the base: Press the crust mixture evenly into the bottom of a 7″ springform pan or a pie dish lined with parchment paper. Set aside.
  3. Make the filling: Rinse out your food processor, then add the avocados. Blend until the mixture is smooth and creamy, scraping down the sides as needed.
  4. Add the flavor: Add lime juice, zest, maple syrup or honey, vanilla extract, and salt. Blend until fully incorporated and adjust to taste.
  5. Incorporate the oil: With the food processor running, slowly drizzle in the melted coconut oil. Continue blending until the mixture is silky and smooth.
