Ingredients
For the brownies
10 tablespoons unsalted butter
1 cup granulated sugar
1/3 cup light brown sugar
3/4 cup plus 2 tablespoons unsweetened cocoa powder, sifted
1/2 teaspoon vanilla extract
2 large eggs
1 egg yolk
1 tablespoon corn syrup
2/3 cup all purpose flour
1 tablespoon cornstarch
1/4 teaspoon fine sea salt
For the frosting
1/2 cup heavy cream
1 1/2 cups semisweet chocolate chips
Rainbow candy coated chocolate chips or mini chocolate candies
Instructions
Preheat your oven to 350°F. Line an 8 by 8 inch baking pan with parchment paper or foil. Lightly spray it with cooking spray to prevent sticking.
In a microwave-safe bowl, melt the butter for about 90 seconds. Stir in granulated sugar, brown sugar, and cocoa powder until smooth. Let the mixture cool slightly if it feels too hot.
Mix in the vanilla extract, eggs, egg yolk, and corn syrup. Stir until the batter becomes glossy and well combined.
Add flour, cornstarch, and salt. Stir gently until just combined. Do not overmix, as this can affect the texture.
Spread the thick batter evenly into your prepared pan. Bake for about 25 minutes. The center should be set but still soft. Let the brownies cool completely in the pan.
Heat the heavy cream in the microwave for about 1 minute. Add chocolate chips and let sit for 3 minutes. Stir until smooth and glossy.
Pour the frosting over cooled brownies and spread evenly. Sprinkle candy-coated chocolate chips on top.
Refrigerate for 1 to 2 hours until the frosting sets. Cut into squares and serve chilled for the best texture.
