Ingredients
1/2 pound lean ground beef
4 tablespoons unsalted butter, divided
3/4 cup finely chopped onion
3/4 cup shredded carrots
3/4 cup diced celery
1 teaspoon dried basil
1 teaspoon dried parsley flakes
1–3/4 pounds (about 4 cups) peeled and cubed potatoes
3 cups low-sodium chicken broth
1/4 cup all-purpose flour
8 to 16 ounces cubed Velveeta cheese
1–1/2 cups whole milk
3/4 teaspoon salt
1/4 to 1/2 teaspoon ground black pepper
1/4 cup sour cream
Optional toppings: crispy onion rings, chopped green onions
Instructions
- In a large saucepan over medium heat, cook and crumble the ground beef until browned and no longer pink, about 6-8 minutes. Drain and set aside.
- Using the same saucepan, add 1 tablespoon of butter and let it melt. Add onions, carrots, celery, basil, and parsley. Cook for 10 minutes, stirring occasionally, until vegetables are tender.
- Mix in the potatoes, chicken broth, and the cooked beef. Increase the heat to bring to a boil, then lower to a simmer. Cover and cook for 10-12 minutes or until the potatoes are fork-tender.
- In a small skillet, melt the remaining 3 tablespoons of butter. Gradually whisk in the flour and stir continuously for 3-5 minutes, until the mixture becomes bubbly and thickened.
- Slowly incorporate the flour mixture into the soup. Return to a boil and stir for another 2 minutes to allow it to thicken.
- Lower the heat and stir in the Velveeta, milk, salt, and pepper. Continue stirring until the cheese has fully melted.
- Remove from heat and gently mix in the sour cream until smooth and creamy.
- If desired, top with crispy onion rings and a sprinkle of green onions before serving.
Notes
For best results, use freshly grated carrots.
