Ingredients

10 large eggs

Salt and pepper, to taste

1½ cups shredded cheddar cheese

5 slices bacon, cooked crisp

5 breakfast sausage patties, cooked

Nonstick cooking spray or butter/oil


Instructions

  1. Prep your fillings:
    Sauté sausage patties until golden and thoroughly cooked; keep them warm.
  2. Whisk the eggs:
    Crack two eggs per roll-up (10 eggs total) into a bowl, season with salt and pepper, and whisk until smooth.
  3. Cook the egg “tortilla”:
    Preheat a nonstick skillet over medium-high. Once the pan is hot, lower the heat to medium-low, apply a light coat of cooking spray, and pour in the beaten eggs. Cover and let cook for about 2–3 minutes until nearly set but still slightly moist.
  4. Add cheese and meats:
    Sprinkle about ⅓ cup of cheddar onto the egg. Layer a slice of bacon over the cheese, then split a sausage patty in half and place both halves on top.
  5. Roll it up:
    Using a spatula, carefully fold the egg over the fillings, folding in thirds like a burrito or taquito. Press gently to seal the roll shape. Slide onto a plate and set aside.
  6. Repeat:
    Repeat steps for the remaining four roll ups, whisking fresh eggs each time to maintain structure and flavor.
  7. Serve or store:
    Enjoy your roll ups warm, or let cool before storing in an airtight container in the fridge or freezer.

Notes

Make ahead and freeze: Freeze cooked roll ups on a baking sheet, then store in freezer bags.
