12 oz semi sweet chocolate chips
1/2 cup unsalted butter
1/2 cup cocoa powder
1/2 cup sourdough starter discard
1/2 cup packed brown sugar
1 cup white sugar
1 egg yolk
2 large eggs
1 cup plain flour
1 teaspoon salt


Instructions

  1. Start by preheating your oven to 350°F or 176°C. Line a 9 by 9 inch baking dish with parchment paper, making sure it covers the sides for easy removal later.
  2. In a small saucepan over low heat, melt the butter gently. Once melted, add the chocolate chips, cocoa powder, and vanilla essence. Stir continuously until everything is smooth and glossy. Remove from heat and allow it to cool slightly so it does not cook the eggs later.
  3. In a large mixing bowl, beat the eggs, egg yolk, brown sugar, and white sugar using an electric mixer. Continue mixing for about 7 to 10 minutes until the mixture becomes pale, thick, and creamy. This step helps create that signature crackly top.
  4. Add the sourdough discard and the cooled chocolate mixture into the bowl. Mix on low speed until everything is fully combined.
  5. Gently fold in the flour and salt using a spatula. Do not overmix, just stir until no dry streaks remain. The batter will be thick and rich.
  6. Pour the batter into your prepared baking dish and smooth the top evenly. Bake for 35 to 40 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  7. Let the brownies cool completely in the pan before lifting them out and slicing into squares.
