Description

Healthy Chocolate Covered Strawberry Truffles are easy, no-bake treats made with wholesome ingredients like dates, almond flour, and freeze-dried strawberries. They’re vegan, naturally sweetened, and full of rich chocolate flavor. Perfect for sharing, gifting, or keeping on hand for a satisfying sweet bite.

Base Ingredients:

1 (0.7 oz / 20g) package freeze-dried strawberries (about 3/4 cup)

7 Medjool dates, pitted

2 tablespoons cashew butter

1/4 cup almond flour

1 teaspoon vanilla extract

1 teaspoon hot water (adjust as needed)

Pinch of sea salt

Chocolate Coating:

3/4 to 1 cup dark chocolate chips (vegan if needed)

1/2 teaspoon tahini (optional)


Instructions

  • Place the pitted Medjool dates in a food processor and pulse for 30 to 45 seconds until finely chopped.
  • Then, place the freeze-dried strawberries into the food processor and process until they become a fine powder.
  • Add the cashew butter, almond flour, vanilla, sea salt, and hot water. Blend until the mixture forms a dough.
  • The mixture should hold its shape when pinched between your fingers. If it’s too dry, add a touch more water; if too wet, sprinkle in a little almond flour.
  • Scoop 1 tablespoon of the dough, roll into firm balls, and place on a parchment-lined plate.
  • Freeze for 30 minutes or until the balls are very firm.
  • Melt the chocolate chips in a pot over low heat or in the microwave in 10-second intervals, stirring between each until smooth.
  • Stir in tahini for a glossy finish (optional).
  • Dip each frozen truffle into the melted chocolate, letting the excess drip off, then set on a drying rack or parchment paper.
  • Optionally, sprinkle with crushed freeze-dried strawberries for color and texture.
  • Chill in the refrigerator until the chocolate is set.

Notes

Use soft, fresh Medjool dates. If they’re dry, soak them in warm water for 10 minutes first.

Freeze-dried strawberries give the best texture. Fresh berries are not recommended.

Tahini adds a silky finish but is optional.

Store in the fridge for up to 1 week or freeze for longer storage.
